Ingredients
2 packs of Beef Oxtail
Blazing Star BBQ All Purpose Rub
4 cups of beef broth
One large yellow onion
One medium red bellpepper
4 cloves of garlic
2 tablespoons of Blazing Star BBQ All Purpose Rub
2 tablespoons of chili powder
One 15 oz can of tomato sauce
Two 10 oz cans of Rotel Original Diced Tomatoes & Green Chilies
Two 15 oz cans of Mixed Chili Beans(Red kidney beans, pinto beans, black beans)
½ cup of Blazing Star BBQ Spicy Sauce
Directions
Trim excess fat around oxtails and season all sides with the Blazing Star BBQ all-purpose rub or your favorite seasonings. Cook on your smoker for about 4 hours at 250 degrees. Remove oxtails and put them in an aluminum pan with 4 cups of beef broth. Cover with aluminum foil and put back on the smoker or in the oven at 250 degrees for 3 hours. Flip them at the halfway mark to make sure all the meat gets tender and juicy. Pull off the smoker and take meat out of the pan, so you can let it cool before shredding off the meat. Best to do this process the day before. You can also substitute chuck roast with recipe.
Next step is to sauté the onion and red bell pepper before you add in the minced garlic. Continue to sauté for another minute before stirring in the Blazing Star BBQ all-purpose rub and chili powder. Now it is time to add this with the shredded oxtail meat and all other ingredients to the crockpot or slow cooker. Let this cook on high for 4 hours or on low for 8 hours. Time to set it and forget it, while you prepare all of your other game time snacks.
