Recipe (can be halved)
4-5lbs flank steak trimmed
1 cup bourbon
1 cup dijon mustard
1 cup low sodium soy sauce
1 cup brown sugar
1 bunch green onions white and green parts trimmed and chopped
11/2 tablespoons cornstarch (for the gravy preparation)
combine the bourbon, mustard, soy sauce, brown sugar and green onion in a non-reactive dish or large zip top bag. Add the flank steak and marinade +4 hours or overnight. (overnight recommended).
Prepare your grill. Reserve marinade for gravy. Cook flank steak over direct heat for 8-10 minutes on each side for medium rare. Remove and rest for 10 minutes. Slice on an angle and serve with mashed potatoes and bourbon and brown sugar gravy.
Whisk the cornstarch with the reserved marinade and heat over medium high heat. Bring to a boil and reduce heat until desired consistency.
