
- Marinated the wings in hot sauce overnight
- Seasoned with the following: bbq sea salt and
- sweet heat seasoning from @gustusvitae
- Smoked indirect on the @blazeoutdoorproducts kamado grill with the incomparable @prime6charocal and chunks on plum wood for about an hour flipping at halfway point.
- Then pulled the wings and finished the cook with that crazy good blackberry bourbon sauce
Blackberry Bourbon Sauce:
1 cup of fresh blackberries
3/4 cup bourbon - used American Barrel Bourbon for this batch
1 tbs of olive oil
1/2 cup white onion finely minced
1 glove of garlic finely minced
1-1/2 cups of Ketchup
2 tbs of tomato paste
2 tbs balsamic vinegar
2 tbs of molasses
1 tbs of worcester
Few dashes of hot sauce
Start with tbs of Olive oil heated in small sauce pan added minced onion and garlic until they reduce then add the blackberries, bourbon and allow that to reduce and then begin to gently add remaining ingredients and mix with hand blender to get smooth. Finally allow to cool before put into container for future use.
